倒酒的程序、倒法及杯中的酒量都应讲究
倒酒程序:若是用软木塞封口的酒,在开瓶后,主人应先在自己的杯中倒一点点,品尝一下是否有坏软木味,如果口味欠纯正,应另换一瓶。倒酒时,先首席客人后其他宾客。通常按顺时针方向,在每一个客人的右侧逐一倒酒,最后给自己倒酒。
倒酒的方法:注意将商标向着客人,不要把瓶口对着客人,如果倒汽酒可用右手持杯略斜,将酒沿杯壁缓缓倒入,以免酒中的二氧化碳迅速散逸。倒完一杯酒后,应将瓶口迅速转半圈,并向上倾斜,以免瓶口的酒滴至杯外。
倒酒的量:白兰地只需倒至三分之一杯或更少些;红葡萄酒倒至大半杯即可,例如评酒时有“大半试样”之说,是指倒酒倒至三分之二杯为宜。中国习俗中有“茶七酒八”的说法,也是针对茶杯、酒杯中的茶或酒应倒至何等程度而言的。

怎样开酒及服务一瓶白葡萄酒
1) Prepare a bottle of white wine.准备一瓶白葡萄酒。

3) Open the wine.开酒
Place the white wine into the wine bucket. 白葡萄酒放在冰桶中Open the knife from the wine opener, ensure knife is sharp, clean and not rusty确保酒刀锋利,干净,无锈渍
4) Cutting the foil. 去掉铅封
Hold the bottle’s neck with fingers firmly and hard. 用力用手牢固的指攥住瓶颈Cut the foil around approximately 0.5 cm down the mouth, turn the knife clockwise twice and anti-clockwise once. 铅封在瓶嘴下大约5厘米的处,转动酒刀,顺时针方向两次。逆时针方向一次。 Remove the cut foil, place it in your pocket将去掉的铅封放在自己的口袋内,小心的把酒刀收好。Close the knife carefully. 5) Removing the corkscrew.去掉酒塞
Pierced the cork in the middle with the wine opener’s skewer, lift the cork upwards with the right hand and left hand holding to the bottle’s neck firmly.用酒钻对准酒塞的正中心,右手用力将酒钻钻进酒塞,向上拔出酒塞的同时左手牢固的按住瓶颈。Place the cork upwards on the guest table besides the wine glass.把酒塞向上放在酒杯的旁边Or或者Use a cork holder (If applicable) and place this in front of the head of the table or the person who will taste the wine.用酒塞夹把其放在桌子的前方或是试酒客人的一边。Wipe the bottle’s mouth inside out.擦拭酒瓶口部,由里向外。
6) Presenting the wine.试酒
With the label facing the guest, pour the wine consisting of a mouth full quantity for the guest to taste. (Approx 5-10% of the glass)酒标对准客人,倒入酒杯的5-10%,请其试酒。After guest has tasted, serving of wine will beClockwise, while ladies first, the person who tasted last.试酒后,按顺时针方向依次倒酒,女士优先,试酒的人最后服务
7) Pour the wine斟酒

先给女士酒,再给男宾,最后给点酒的人倒
